Garlic Butter Steak Bites with Roasted Carrots

Ingredients:

• 4 oz sirloin steak, cut into 1-inch cubes
• 1 cup carrots, sliced on diagonal
• 1 tbsp olive oil (divided)
• 1 tbsp unsalted butter
• 2 garlic cloves, minced
• ¼ tsp sea salt
• ¼ tsp black pepper

Optional side: ½ cup cooked white rice

Instructions:

  1. Preheat oven to 400°F.
  2. Toss carrots with ½ tbsp olive oil + pinch salt.
  3. Spread on small baking sheet in single layer.
  4. Roast 20–25 minutes until fork tender and lightly caramelized.

For steak:

  1. Pat steak dry with paper towel (important for sear).
  2. Heat skillet over medium-high until hot.
  3. Add remaining ½ tbsp olive oil.
  4. Place steak pieces in single layer — do not overcrowd.
  5. Sear 2 minutes without moving.
  6. Flip and cook additional 1–2 minutes for medium.
  7. Reduce heat to low.
  8. Add butter and minced garlic.
  9. Spoon melted butter over steak for 30 seconds.
  10. Remove immediately to avoid overcooking.
