
Garlic Butter Steak Bites with Roasted Carrots

Ingredients:
• 4 oz sirloin steak, cut into 1-inch cubes
• 1 cup carrots, sliced on diagonal
• 1 tbsp olive oil (divided)
• 1 tbsp unsalted butter
• 2 garlic cloves, minced
• ¼ tsp sea salt
• ¼ tsp black pepper
Optional side: ½ cup cooked white rice
Instructions:
- Preheat oven to 400°F.
- Toss carrots with ½ tbsp olive oil + pinch salt.
- Spread on small baking sheet in single layer.
- Roast 20–25 minutes until fork tender and lightly caramelized.
For steak:
- Pat steak dry with paper towel (important for sear).
- Heat skillet over medium-high until hot.
- Add remaining ½ tbsp olive oil.
- Place steak pieces in single layer — do not overcrowd.
- Sear 2 minutes without moving.
- Flip and cook additional 1–2 minutes for medium.
- Reduce heat to low.
- Add butter and minced garlic.
- Spoon melted butter over steak for 30 seconds.
- Remove immediately to avoid overcooking.
