Lemon Blueberry Pancakes

Ingredients:

Instructions:
- In a mixing bowl, whisk together flour, baking powder, and salt.
- Add egg, milk, olive oil, and lemon zest. Stir until smooth.
- Gently fold in blueberries.
- Heat a lightly oiled skillet over medium-low heat.
- Pour about ¼ cup batter per pancake onto the skillet.
- Cook 2–3 minutes, until bubbles form on the surface.
- Flip pancakes and cook an additional 2 minutes, until golden.
