Lemon Blueberry Pancakes

Ingredients:

• ½ cup all-purpose flour
• ½ tsp baking powder
• Pinch salt
• 1 egg
• ⅓ cup milk
• 1 tsp olive oil (plus extra for pan)
• Zest of ½ lemon
• ¼ cup fresh blueberries

Instructions:

  1. In a mixing bowl, whisk together flour, baking powder, and salt.
  2. Add egg, milk, olive oil, and lemon zest. Stir until smooth.
  3. Gently fold in blueberries.
  4. Heat a lightly oiled skillet over medium-low heat.
  5. Pour about ¼ cup batter per pancake onto the skillet.
  6. Cook 2–3 minutes, until bubbles form on the surface.
  7. Flip pancakes and cook an additional 2 minutes, until golden.
